Āsh-e Anār (Persian Pomegranate Soup): A Traditional Winter Recipe

Ingredients (Serves 4–6)
Main Ingredients:
- 1 cup fresh or unsweetened pomegranate juice
- ½ cup pomegranate seeds

- ½ cup rice
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp turmeric
- Salt and black pepper, to taste
- 6 cups water or vegetable stock
Fresh Herbs (finely chopped):
- ½ cup parsley
- ½ cup coriander (cilantro)
- ½ cup spinach or Swiss chard
Optional Garnishes:
- Fried onions
- Dried mint
- Extra pomegranate seeds
How to Make Persian Pomegranate Soup:
Step 1: Cook the Legumes
Add soaked split peas or chickpeas to a pot with water. Cook until partially tender.
Step 2: Add Rice
Add rice to the pot and continue cooking until the grains soften and the soup thickens.
Step 3: Prepare the Onion Base
Heat olive oil in a pan. Sauté the onion until golden. Add garlic and turmeric and stir until fragrant.
Step 4: Combine
Add the onion mixture to the soup pot and mix well.
Step 5: Add Herbs
Stir in the chopped herbs and let the soup simmer gently for 15–20 minutes.
Step 6: Add Pomegranate Juice
Pour in the pomegranate juice, season with salt and pepper, and simmer on low heat for another 10 minutes. Avoid boiling to preserve flavour.
Step 7: Finish and Serve
Add fresh pomegranate seeds just before serving.
