Earl Grey Lavender Sparkler

Ingredients:

- 2 cups water
- 2 Earl Grey tea bags
- 1 tablespoon dried lavender flowers (culinary grade)
- 3 tablespoons honey or simple syrup (adjust to taste)
- Juice of 1 lemon
- Sparkling water or club soda
- Ice cubes
- Lemon slices and lavender sprigs for garnish

Instructions:

1. Brew the Earl Grey Tea:
- Boil water and pour over the Earl Grey tea bags in a heatproof pitcher. Allow to steep for about 4-5 minutes, then remove the tea bags to avoid bitterness.

2. Infuse with Lavender:
- Add the dried lavender flowers to the hot tea. Let them infuse for about 5 minutes, then strain the mixture to remove the lavender, ensuring the flavor is floral but not overpowering.

3. Sweeten the Mixture:
- While the tea is still warm, stir in the honey or simple syrup, adjusting the sweetness according to your preference.

4. Add Lemon Juice:
- Stir in the fresh lemon juice, adding a bright, citrusy note that complements the floral and tea flavors.

5. Chill:
- Refrigerate the tea mixture until it is thoroughly chilled.

6. Prepare the Mocktail:
- Fill glasses with ice cubes. Pour the chilled Earl Grey lavender tea over the ice, filling about three-quarters of the glass.

7. Add Sparkling Water:
- Top off each glass with sparkling water or club soda to add a refreshing fizz.

8.Garnish and Serve:
- Garnish with a slice of lemon and a sprig of lavender or a small lavender flower. This adds an extra touch of elegance and enhances the floral theme.

The Earl Grey Lavender Sparkler is a sophisticated mocktail that offers a delightful fusion of flavors, making it an excellent choice for those who appreciate the finer things in life, without the addition of alcohol.
