Earl Grey Lavender Tea-Infused Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 tablespoon Earl Grey tea leaves
  • 1 tablespoon culinary lavender buds
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

For the Earl Grey Lavender Glaze:

  • 1/2 cup powdered sugar
  • 1 tablespoon brewed Earl Grey tea, cooled
  • 1/2 teaspoon culinary lavender buds (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

  2. Prepare the Dry Ingredients: In a food processor or spice grinder, pulse the Earl Grey tea leaves and culinary lavender buds until finely ground. In a mixing bowl, combine the ground tea and lavender with the flour, sugar, baking powder, baking soda, and salt. Mix well to ensure even distribution of ingredients.

  3. Cream the Butter and Sugar: In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Add the Wet Ingredients: Beat in the eggs, one at a time, until well incorporated. Stir in the vanilla extract.

  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.

  6. Bake the Cake: Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool the Cake: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Prepare the Glaze: In a small bowl, whisk together the powdered sugar and brewed Earl Grey tea until smooth. Adjust the consistency by adding more powdered sugar or tea as needed.

  9. Glaze the Cake: Once the cake has cooled, drizzle the Earl Grey Lavender Glaze over the top of the cake. If desired, sprinkle culinary lavender buds over the glaze for an extra touch of lavender flavor and visual appeal.

  10. Serve: Slice the Earl Grey Lavender Tea-Infused Cake and serve it as a delightful dessert or afternoon treat alongside a cup of Earl Grey tea.
