Ghormeh Sabzi: A traditional vegan Persian cuisine
ghormeh Sabzi is one of the most popular Persian dishes. With its good flavor, this dish has become a popular dish throughout Persia. ghormah Sabzi is usually cooked with meat, kidney beans, and aromatic vegetables. If you like to try different versions of ghormeh Sabzi or if you like to eat a completely vegetarian dish, you can cook ghormeh Sabzi without meat and enjoy its taste and aroma.
Ingredients:
- 220g basmati rice
- 200g of chopped fried vegetables (spring onion, parsley and coriander)
- 100g of cooked kidney beans
- 40g lemon juice
- 1 onion
- Turmeric, salt, pepper, and cumin
How to cook:
First, fry the onion with a little oil for 3 minutes then add salt, pepper, turmeric, and cumin to it.
Add cooked kidney beans and fried vegetables to them. pour 200g water into the stew and let the stew gets cooked for 90 minutes on medium heat on hob.
(It is better to use a small pot and not pour too much water into the stew so that the food does not become watery).
Add the lemon juice during the last 30 minutes of cooking.
Cooking rice:
Wash once rice then put it into a saucepan add 1 cm water, 1 teaspoon of oil and one teaspoon of salt to it and heat it for 35 minutes on medium heat.
