Kuku sibzamini: Persian Vegan Food
Ingredients:
- 5 medium potatoes
- 1 medium onion
- 3 eggs
- 1 tablespoon White flour or corn flour
- 1 tbsp. Dry dill
- ½ tablespoon Garlic powder (or 1 clove of fresh garlic)
- Salt, cumin, black pepper, and turmeric
How to cook:
First stage:
Wash the potatoes, then put them in a pot. add 300g water to the pot and put it on the heat until potatoes are boiled. let them cool down, then peel them. grate the potatoes.
Second stage:
Grate the onion and garlic, then squeeze the excess water from the onion and add it to the bowl containing the potatoes.
Third stage:
Break the eggs into a separate bowl and mix well. Then add some salt, black pepper, cumin, and turmeric to the eggs. Adding dry dill is optional. If you want to add dry dill, add it to the eggs and mix well.
Forth step:
Add the eggs to the bowl containing the potatoes and add white or corn flour to the material and mix them well. Now, put a frying pan on the heat. Pour some oil into frying pan and let the oil get hot. After the oil is hot, take some of material and shape it, then drop it in the oil. After one side of it is fried, turn them over to fry the other side as well. After the food is ready, serve them with tomatoes, pickles and bread. Enjoy your meal.
(If you want to cook Kuku in the oven, grease mold with a little oil, then pour material into the mold. be sure to cover the mold with aluminum foil. put the oven at 180 degrees Celsius for 35 to 45 minutes).
