Mirza Ghassemi: An Easy Delicious Persian Food


  • 1 large eggplant
  • 4 medium tomatoes
  • 2 eggs
  • 3 cloves of Garlic
  • 1 tablespoon Tomato puree
  • Turmeric, salt, cumin, and black pepper

How to cook:

First stage:  grill the eggplant or bake it in the oven. We should grill or bake the eggplant well until the skin of the eggplant is completely burnt. Then, let it cool down a bit, and remove its skins. Now, mash it and put it aside.

Second stage:

Grate tomatoes and cloves of garlic separately. Put a frying pan on the hob and pour half of a tablespoon of veg oil into it. Let it get heated. Then, put grated garlic into it and add half of the tablespoon turmeric on it and let it get fried slightly.

Third stage:

Put another frying pan on the hop and pour grated tomatoes into it and let it get cooked until its water gets finished.

Fourth stage: put mashed eggplant in a frying pan along with garlic and mix them a bit. Now add grated tomatoes to them and mix them. Add some salt, black pepper and cumin to them.


Fifth stage: put the Mirza Ghasemi ingredients on one side of the frying pan, then break the eggs in the empty part of the frying pan, and after they are cooked well, mix them with the other ingredients. You can add tomato puree to the ingredients if you like it more colorful.

Serve it with olives and vegetables.
