Persian Rosewater and Basil Seed Drink (Sharbat-e Khakshir)
Ingredients:
For the Drink:
- 1/4 cup basil seeds (also known as Tukmaria or chia seeds)
- 1/4 cup Khakshir seeds (also known as flixweed seeds, optional)
- 4 cups cold water
- 1/4 cup rosewater
- 1/2 cup sugar (or to taste)
- Juice of 1 lemon
- Ice cubes
- Fresh mint leaves for garnish (optional)
Instructions:
- Prepare the Seeds:
- Rinse the basil seeds and Khakshir seeds under cold water to remove any impurities.
- Soak the basil seeds in a cup of water for about 10 minutes until they swell and form a gel-like texture. If using Khakshir seeds, soak them separately for the same amount of time.
- Prepare the Sweetened Rosewater:
- In a large pitcher, combine the sugar with 1 cup of cold water and stir until the sugar is completely dissolved.
- Add the rosewater and lemon juice to the pitcher and stir well.
- Combine the Ingredients:

- Pour in the remaining 3 cups of cold water and stir to combine.
- Adjust the sweetness by adding more sugar if needed.
