-          1 cup fresh pomegranate juice (100% natural, strained)

-           1 tablespoon gelatin powder

-           3–4 tablespoons sugar (adjust to taste)

-          1 teaspoon vanilla extract (optional)

 Instructions:

1. Bloom the gelatin

   Sprinkle the gelatin over the cold water and allow it to bloom for about 5 minutes until softened.

 

2. Warm the pomegranate juice

   Gently heat the pomegranate juice in a saucepan over low heat.

   Add sugar and stir until fully dissolved. Do not boil.

 

3. Dissolve the gelatin

   Remove from heat and stir in the bloomed gelatin until completely dissolved.

   Set aside and allow the mixture to cool to room temperature.

 

4. Whip the cream

   In a separate bowl, whip the cold heavy cream until soft peaks form.

 

5. Fold gently

   Slowly fold the cooled pomegranate mixture into the whipped cream using a spatula.

   Mix gently to maintain a light and airy texture.

 

6. Chill and set

   Divide the mousse into serving glasses and refrigerate for 2–3 hours until set.

 

7. Garnish and serve

   Top with fresh pomegranate seeds before serving for added texture and colour.
