Tachin recipe: A delicious Persian Food


Tachin is one of the popular Persian dishes, which is also known as special food for important gatherings.


- 450g Basmati rice

- 300g Chicken breast

- 120g Greek yogurt

- 1 medium onion

- 2 egg yolks

- 100g Barberry and some sliced pistachio  (If you like)

- half of tablespoons of powdered saffron

- Enough salt a black pepper, cinnamon, cumin, Turmeric and oil


First stage

To prepare the chicken, we first put the chicken into saucepan and add two glasses of water and sliced onion, then we add enough salt, turmeric, cinnamon, cumin to chicken. we put the saucepan on medium heat until the chicken is boiled.

second stage

In order to make the chicken taste better, it is better to let all the water in the pot drain, this will make the flavor of all the spices absorb into the chicken meat. After removing the chicken from the heat and letting it cool down a bit, we cut it into small pieces.

The Third stage

Now, rinse the rice once then add 1 cm water to rice and put it on pot. Add 1 teaspoon of salt and1 teaspoon of oil to the rice. . put pot on the heat and let the water boil. When the rice grains are soft, but their kernels are hard, turn off the hob.

The Fourth stage

At this stage, we rinse the barberries, which we have soaked for 20 minutes, then fry them with powdered sugar and oil for 4 minutes, then we set the barberries aside.

The Fifth stage

Now, pour the egg yolks into a large bowl. Then, mix the egg yolks for 5 minutes, then add the Greek yogurt along with brewed saffron to the bowl and mix well until the ingredients are completely mixed.

The sixth stage

At this stage, add the rice to the bowl containing the egg and yogurt mixture and mix them well. then, we grease the pot that we want to cook Tachin with a little oil.

The seventh stage

Now, we pour half of the mixture on the bottom of the pot and press it well with the back of a spoon, then pour the fried chicken on the rice along with barberry. then, we add the rest of the rice mixture to the pot. we press the rice again with the back of a spoon so that the bottom of the fold does not fall apart after cooking. Then we put the pot on a very gentle heat. It takes about 45 minutes to an hour to cook Tachin. At the end, after the cooking of Tachin is finished, we slowly turn it on a dish, then we decorate it with pistachio slices and barberry.

How to prepare Saffron for using in foods:

after buying saffron. make it powdered and pour in an empty salt shaker. for Tachin we need half of teaspoon of powdered saffron. then, add a cup of boiled water to saffron and mix it well and pour it to material.
