Tea-Infused Citrus Salad
Ingredients:
For the Salad:
- 4 cups mixed greens (spinach, arugula, and/or lettuce)
- 1 orange, peeled and sliced
- 1 grapefruit, peeled and sliced
- 1 avocado, peeled, pitted, and sliced
- 1/4 cup sliced almonds
- 1/4 cup crumbled goat cheese or feta cheese
- Optional: 1/4 cup dried cranberries or pomegranate seeds
For the Tea-Infused Citrus Dressing:
- 1/2 cup brewed citrus-flavored tea (lemon, orange, or grapefruit), cooled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey or maple syrup
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste

Brew the Citrus-Flavored Tea: In a small pot, bring 1 cup of water to a boil. Add 2-3 tea bags of your preferred citrus-flavored tea (or loose leaf tea) to the boiling water and let it steep for 5-7 minutes. Remove the tea bags or strain the loose leaves and allow the tea to cool completely.

Prepare the Salad: In a large mixing bowl, combine the mixed greens, orange slices, grapefruit slices, avocado slices, sliced almonds, and crumbled goat cheese. If using, add dried cranberries or pomegranate seeds for an extra burst of flavor and color.

Make the Tea-Infused Citrus Dressing: In a small bowl, whisk together the cooled citrus-flavored tea, extra virgin olive oil, honey or maple syrup, fresh lemon juice, Dijon mustard, salt, and pepper until well combined.

Assemble the Salad: Drizzle the tea-infused citrus dressing over the salad mixture. Toss gently to coat all the ingredients with the dressing.
